Cherry and Almond Muffins

You can use the Cherry and Almond Cake mix to make very moreish muffins.

1. Make up the mixture as for the previous recipe but line the cups of a 12-cup muffin tin with paper muffin cases and divide the mixture equally between them.

2. Bake at 160ÂșC (fan ovens) or equivalent, for approximately 20 minutes, or until a skewer comes out clean.

3. Transfer to a wire rack to cool completely.

Carrot Cake

This delicious carrot cake is full of good wholesome ingredients. Use fresh young carrots for maximum flavour and goodness. Eat it as it is, with a light sprinkling of Cinnamon Dust (page 25), or top with Orange-flavoured Coconut Frosting (page 23) or Mascarpone Topping (page 24).
